Chicken Breasts with Mushrooms and Asparagus
Peel the asparagus, rinse and pat dry. Cut into 3-4 cm (approximately 1 3/4-inch) long pieces.
Preheat the oven to 220°C (approximately 430°F). Line a baking sheet with parchment paper.
Rinse the chicken breasts, pat dry and cut into pieces. Clean the mushrooms and halve or quarter depending on size. Rinse and cut the scallions on the diagonal. Place the asparagus, chicken and mushrooms on the baking sheet and spread evenly in a single layer. Drizzle with the oil and season with salt and pepper. Bake about 10 minutes. Toss to combine and sprinkle with the cheese and the scallions. Bake 5-10 until the chicken is golden brown and cooked through, 5-10 minutes longer. Serve sprinkled with chives.
