300 grams wide Rice noodles
4 Red mullet fillets (each about 180 grams)
1 bunch scallions
2 garlic cloves
1 Tbsp freshly grated ginger
2 Tbsps vegetable oil
400 milliliters fish stock
3 Tbsps Chili sauce
light soy sauce (to taste)

Preparation steps

Cook the noodles according to package directions until al dente. Rinse the red mullet, pat dry and score the skin with a sharp knife on each side three times. Rinse, trim and cut the scallions diagonally into 3 cm (approximately 1-inch) long pieces. Peel the garlic and finely chop. Mix with the ginger and place in the cuts on the fish. Season the fish inside with a little soy sauce.

Sauté the scallions in hot oil in a wok and pour in the stock. Add the fish and the chili sauce. Cover and let stand about 5-6 minutes. Then remove the fish and add the noodles to the wok. Add soy sauce to taste and toss with ingredients in the wok to combine. Arrange noodles and fish together on warmed plates and serve.
