Preparation steps

1.

Rinse and dry eggplants and zucchinis, cut into bite-sized pieces. Peel onion and cut into strips. Blanch tomatoes, rinse with cold water and peel, cut into wedges. Peel and chop garlic. Rinse bell peppers, halve and remove seeds and ribs, cut into small pieces.

2.

Heat oil in a saucepan and saute eggplants for a few minutes. Add remaining vegetables, season with salt and pepper and add thyme and bay leaf. Simmer on low heat for 15 minutes. Season to taste again, remove bay leaf and serve.
