- 10 ozs Penne
- salt
- 8 ozs thin Sausage
- vegetable oil
- 2 red onions
- 10 ozs Cherry tomatoes
- ½ bunch Arugula
- freshly ground peppers
- 4 Tbsps balsamic vinegar
- 6 Tbsps olive oil
- 4 Tbsps grated Parmesan

Preparation steps
1.
Cook pasta in plenty of salted boiling water until al dente. Drain, rinse and drain again.
2.
Fry sausage in oil on all sides, then cut diagonally into thick slices.
3.
Peel and halve onions lengthwise, then thinly slice lengthwise into strips.
4.
Rinse and halve cherry tomatoes. Rinse arugula and tear into bite-sized pieces.
5.
Combine all salad ingredients in a bowl. Whisk together vinegar and oil and season with salt and pepper. Toss salad with dressing and serve with Parmesan.
