120 grams Barley
200 grams Knockwurst
1 onion
vegetable oil
800 milliliters Beef broth
1 bay leaf
3 peppercorns
salt
250 grams waxy potatoes
2 carrots
½ stalk Leeks
peppers (from the mill)
2 sprigs parsley
1 sprig Lovage

Preparation steps

Rinse barley in a sieve. Cut sausage into slices. Peel onion, chop finely and sauté sausage slices in a pot in 1-2 tablespoons hot oil. Remove sausage slices and set aside. Add barley, sauté briefly and add broth. Add bay leaf and peppercorns and simmer about 25 minutes over medium heat then add salt.

Meanwhile peel potatoes and carrots and chop. Cut leeks lengthwise, wash thoroughly and cut into thin rings.

Add vegetables to soup, season with salt and pepper to taste and cook for another 20 minutes. Rinse parsley and lovage, shake dry, chop leaves coarsely and add with sausage to soup to serve.
