1 untreated lemon
cup sweet Red wine (or Port)
¼ cup sugar
4 ripe Peaches (halved and stones removed)
1 pinch Saffron
Plus
cup whipping cream (at least 30% fat)
1 Tbsp chopped, fresh mint
mint (to garnish)

Preparation steps

1.
Cut out a thin piece of lemon zest and cut it into fine strips. Juice the lemon.
2.
Boil the wine, lemon juice and zest, sugar and saffron in 250 ml water. Add the peaches and bring back to a boil. Remove from the heat and allow to steep.
3.
Before serving, whip the cream and stir in the chopped mint. Serve the peaches and the sauce in bowls and garnish with mint leaves.
