Spinach is rich in iron and also contains a lot of folic acid - ideal for a vegetarian dish! Its oxalic acid, which leaves a dull feeling on the teeth, is neutralized by the calcium in the cheese.
The pan-fried dish can be easily modified. For example, you can cook 500 grams of thinly sliced potato slices in 200 millilitres of broth instead of the noodles or use chard instead of spinach.

- 300 grams Spinach
- 120 grams Lasagne noodle
- 300 milliliters Vegetable broth
- 2 Tbsps Peanut butter (about 40 grams)

- 75 grams Raclette Cheese (45% fat in solids)

Preparation steps
Trim spinach, rinse, drain and divide large leaves into pieces.
Break lasagna noodles into bite-sized pieces.
Boil vegetable broth in a large deep skillet, stir in noodles, cover and cook over medium heat for 10 minutes.
Stir in peanut butter, spinach, salt and pepper. Grate in nutmeg and cook covered over medium heat for another 5 minutes.
Remove lid and cook for about 5 more minutes until the noodles are cooked and most of the liquid is absorbed.
While the noodles are cooking, cut cheese into small cubes. Then add cheese to the spinach pasta, stir to melt and serve.
