400 grams Penne
salt
600 grams fresh Spinach
2 garlic cloves
1 shallot
2 Tbsps olive oil
50 milliliters dry white wine
250 milliliters Whipped cream (at least 30% fat content)
freshly ground peppers
Nutmeg
200 grams Cottage cheese

Preparation steps

Cook penne in salted boiling water until al dente, 15-20 minutes. Meanwhile, rinse and spin spinach dry. Peel garlic and shallot. Dice shallot and cut garlic into thin slices.

In a saucepan, sauté garlic in oil until golden. Add shallot and spinach and sauté until spinach has wilted. Deglaze with white wine and cream. Simmer over medium heat about 5 minutes. Season with salt, pepper and nutmeg. Drain pasta and toss with spinach sauce. Divide pasta among warmed plates and serve with a dollop of cottage cheese.
