1 Tbsp black peppercorns
70 grams grated Parmesan
30 grams butter
½ tsp salt
120 grams Pastry flour
3 eggs

Preparation steps

1.

Preheat the oven to 200°C (approximately 400°F). Grease an 8-cup muffin tin.

Crush the peppercorns. Mix the pepper and Parmesan.

3.

Bring to a simmer 250 ml (approximately 1 cup) of water, butter and salt. Add the flour and stir with a wooden spoon until the dough forms a ball. Transfer the mixture to a bowl. Add 1 egg and 2-3 tablespoons of Parmesan mixture and stir until smooth. Stir in the next egg and 2-3 tablespoons of Parmesan and stir until smooth. Continue until with the remaining egg and Parmesan mixture. 

4.

Place the dough in the muffin cups and bake until golden brown about 25 minutes. Remove and let cool before serving.
