Ingredients

For the pancakes
6 ozs Pastry flour
3 Tbsps Whipped cream
6 ozs milk
2 egg yolks
salt
butter (for cooking)
For the filling
4 Tbsps raisins
2 Apple
1 tsp butter
2 Tbsps Maple syrup
1 tsp Lemon peel
1 Tbsp breadcrumbs
6 tsps chopped almonds

Preparation steps

1.

Mix the flour with cream, 1/2 cup water, milk, egg yolks, and 1 pinch of salt to make a smooth batter. Set aside for about 20 minutes.

Soak the raisins in 4 tablespoons of lukewarm water. Rinse the apples, cut into quarters, cut out the cores, cut into thin strips and saute in a pan with hot butter. Add the raisins with the soaking liquid and the lemon zest and simmer for about 3 minutes.

Toast the breadcrumbs and almonds until golden brown in a dry pan.

Cook 4 pancakes in a pan with hot butter and keep the finished pancakes warm in the oven 150°F. Serve the pancakes with the apple sauce and sprinkle with the toasted almond mixture.
