- 1 cup Almond butter
- ⅜ cup Maple syrup
- 1 egg (lightly beaten)
- 2 Tbsps Coconut oil
- ½ cup cocoa powder
- ½ tsp baking soda
- 1 cup almonds (roughly chopped)
- Blueberries (to serve)
- cocoa powder (for dredging)
Preparation steps
1.
Heat the oven to 160ºC (140º fan) | 325ºF | gas 3. Grease and line a 25cm | 9 inch square baking tin.

Beat together the almond butter, maple syrup, egg and coconut oil in a large bowl.

Fold in the cocoa powder and bicarbonate of soda. Set aside a few of the chopped almonds then fold the rest into the cake mixture.
4.
Pour the batter into the prepared tin and bake in the oven for 20 - 25 minutes.

Let the cake cool in the tin then scatter over the reserved almonds and cut into 12 pieces. Dredge a little cocoa powder over the top and serve with the blueberries.
