1 deep bowl, 1 Hand mixer, 2 Bowls, 1 Small knife, 1 Wooden spoon, 1 Fine-mesh sieve, 1 square Baking dish (20 x 20 cm), 1 Parchment paper, 1 Rubber spatula, 1 Wooden skewer, 1 Wire rack, 1 Large knife, 1 Tea strainer

Preparation steps

Brownies preparation step 1

Separate eggs. Beat egg whites and 1 pinch of salt in a tall vessel with a hand mixer, then gradually beat in sugar. Place egg yolks in a small bowl and set aside.

Halve vanilla bean lengthwise and scrape out seeds with the back of a knife.

Stir vanilla, applesauce and yolks together with a wooden spoon.

Sift together flour, baking power, and cocoa powder over the egg- yolk mixture, stir together and then fold in the egg whites.

Line the bottom of a square baking pan (20 x 20 cm) (approximately 8 x 8 inches) with parchment paper. Pour in batter and smooth the surface with a rubber spatula.

Bake in preheated oven at 175°C (fan 150°C, gas: mark 2) (approximately 350°F) until a skewer inserted into middle of brownies comes out clean, about 20 minutes.

Remove pan from the oven and let cool for 5 minutes. Then remove brownies from pan and continue to cool completely on a cooling rack.

Cut brownies into 9 squares. Dust liberally with powdered sugar before serving.
