We know that chocolate makes you happy. This is a brownies recipe that you don't have to have a guilty conscience about: With applesauce as the main sweetener and just 2 grams of fat per piece, you can easily have two.

If you like, chop 50 grams of mixed nuts and add them to the dough, for example almonds, macadamia nuts, hazelnuts and pecans. Rich in unsaturated fatty acids, they protect our cardiovascular system.

1 deep bowl, 1 Hand mixer, 2 Bowls, 1 Small knife, 1 Wooden spoon, 1 Fine-mesh sieve, 1 square Baking dish (20 x 20 cm), 1 Parchment paper, 1 Rubber spatula, 1 Wooden skewer, 1 Wire rack, 1 Large knife, 1 Tea strainer

Preparation steps

Separate eggs. Beat egg whites and 1 pinch of salt in a tall vessel with a hand mixer, then gradually beat in sugar. Place egg yolks in a small bowl and set aside.

Halve vanilla bean lengthwise and scrape out seeds with the back of a knife.

Stir vanilla, applesauce and yolks together with a wooden spoon.

Sift together flour, baking power, and cocoa powder over the egg- yolk mixture, stir together and then fold in the egg whites.

Line the bottom of a square baking pan (20 x 20 cm) (approximately 8 x 8 inches) with parchment paper. Pour in batter and smooth the surface with a rubber spatula.

Bake in preheated oven at 175°C (fan 150°C, gas: mark 2) (approximately 350°F) until a skewer inserted into middle of brownies comes out clean, about 20 minutes.

Remove pan from the oven and let cool for 5 minutes. Then remove brownies from pan and continue to cool completely on a cooling rack.

Cut brownies into 9 squares. Dust liberally with powdered sugar before serving.
