- 12 ozs Dark chocolate (70% cocoa solids)
- ½ cup Coconut oil (scant)
- ¼ cup raw cacao nib
- 4 large eggs (beaten)
- ⅓ cup unrefined sugar
- 1 tsp vanilla extract
- 1 cup Almond flour
- 1 cup whole Pecan
- To decorate

Preparation steps
1.
Heat the oven to 160°C (140° fan) 325°F gas 3. Grease a 23cm| 9" square tin.
2.
Melt the chocolate and coconut oil in a large heatproof bowl over a pan of simmering (not boiling) water. Remove from the heat and stir in the cacao.
3.
Whisk together the eggs and sugar until thick, then stir in the vanilla.
4.
Fold 1/3 into the chocolate mixture. Fold in the remaining egg mixture, one half at a time, until thoroughly incorporated. Fold in the ground almonds and pecans.
5.
Pour into the tin and bake for 35-40 minutes, until risen in the centre and the edges are firm. The centre may appear unbaked. Cool completely in the tin, then chill for at least 4 hours.
6.
Cut into 16 squares and place a whole pecan on top of each.
