4 kilograms mussels
3 onions
1 Red Bell pepper
1 Leek
1 bunch parsley
1 Tbsp butter
250 milliliters dry white wine
salt
white peppers (freshly ground)

Preparation steps

1.

Throw away any open mussel shells. Brush the rest under running water.

Peel the onions and chop. Rinse the pepper and cut into fine strips. Peel and dice the leeks. Rinse the parsley, shake dry and chop.

Fry the onions in a large pot, then add the vegetables and parsley with 250 ml of water (approximately 1 cup) and the wine. Season with salt and pepper and bring to a boil. Add the mussels and cook over high heat for 8 minutes, covered, shaking occasionally. Throw away any closed shells. Serve the mussels with the white wine sauce.
