Mixed Beans with Cheese
ready in 30 min.
- 7 cups Green beans (trimmed)
- olive oil
- 0.333 cup vegetable stock
- 2 tomatoes (peeled and diced)
- 1 bunch fresh Fresh herbs (e. g parsley, chives, savoury, finely chopped)
- To garnish
- Garlic chive
- Parmesan (grated)

Blanche the beans in salted water for 1 minute. Drain well.
Fry the beans in 1-2 tbsp hot oil and add the stock. Season with salt and ground black pepper, cover and braise on a low heat for around 10 min.
Stir in the tomatoes and the herbs, season to taste and arrange on plates. Drizzle with a little oil and serve garnished with the garlic chives and the Parmesan cheese.
