14 ozs Green beans (trimmed)
1 cup cherry Tomatoes (halved)
1 small Red onion (diced)
2 cups canned cannellini beans (drained)
2 Tbsps olive oil
1 Tbsp lemon juice
salt
freshly ground Black pepper

Preparation steps

1.
Blanch the soy beans and green beans in a large saucepan of salted, boiling water for 2 minutes.
2.
Drain and refresh immediately in iced water until cold. Drain again and toss with the tomatoes, onion, and cannellini beans.
3.
Dress the salad with olive oil and lemon juice, seasoning to taste with salt and pepper.
4.
Divide between bowls and serve.
