30 grams Yeast
3 Tbsps lukewarm milk
1 tsp sugar
200 grams butter (at room temperature)
4 eggs (size M)

Preparation steps

1.

Grease 4 small ramekins with butter. Sift the flour into a bowl and make a well in the center. Crumble the yeast in the well and mix with the milk, sugar and a little flour. Cover the dough and let rise for 15 minutes.

Add the butter with eggs and 1 pinch of salt to the flour mixture and knead to a smooth dough. Cover the dough and let rise for another 30 minutes in a warm place.

Shape the dough into a log on a floured surface and divide into 20 large balls and 20 small balls. Place the large balls into the ramekins, make a well in the center, brush with the beaten egg yolks, and put in the little balls. Brush with the remaining egg yolk and let rise again for 10 minutes.

Bake the in a preheated oven at 220°C (fan: 200°C, gas mark 4) (approximately 425°F) for 15-20 minutes.

Take out the ramekins and let cool slightly. Release the brioches from the ramekins and serve lukewarm.
