Small Brioches
Ingredients
- For the brioche
- 500 grams Pastry flour
- ½ cube Yeast
- 3 Tbsps lukewarm water
- 1 tsp sugar
- 4 eggs
- 1 pinch salt
- 2 egg yolks (beaten)
- For preparing and garnishing
- 20 Baking cups (or foil cups)
- slivered almonds
- Poppy seeds
- Sesame seeds
Preparation steps
Dissolve the yeast and sugar in the lukewarm water.
Melt the butter and allow to cool slightly.
Combine the flour, eggs, salt, yeast mixture and melted butter in a large bowl and knead with the dough hook attachment of an electric mixer until smooth. Cover and let rise in a warm place for 1 hour.
Transfer the dough to a floured surface and knead a few times. Shape into a long roll and cut the roll into 20 equal pieces. Form a small and large ball from each piece.
Place the large balls into the baking cups and brush with the beaten egg yolks. Press the small balls on top of the large and brush with the remaining egg yolk. Sprinkle with slivered almonds, poppy seeds and sesame seeds. Cover and let stand for 15 minutes. Bake in an oven preheated to 220°C (approximately 425°F) for 15-20 minutes. Remove from the oven and the baking cups and cool on a wire rack.
