- 250 grams Rhubarb
- 2 Tbsps sugar
- 8 Apricot (canned)
- 200 grams lamb's lettuce
- 2 shallots
- 2 Tbsps White vinegar
- salt
- peppers (freshly ground)
- 3 Tbsps olive oil
- 120 grams chopped Walnut

Preparation steps
1.
Rinse, trim, peel and cut rhubarb diagonally into 2 cm (approximately 3/4 inch) long pieces. Bring 1 liter water and sugar to a boil. Add rhubarb, cook 4-5 minutes. Lift rhubarb out of liquid and drain. Cut the apricots in slices.
2.
Rinse, trim and spin mache lettuce dry.
3.
Peel and dice shallots.
4.
Mix 1 tablespoon apricot juice with vinegar, season with salt and pepper, and whisk in oil. Mix in shallots.
5.
Toss salad ingredients with dressing, arrange on plates and serve sprinkled with walnuts.
