- ½ bunch scallions
- 70 grams button Mushroom
- For the salad dressing
- 2 Tbsps White vinegar
- 2 Tbsps olive oil
- salt
- freshly ground peppers
- 2 thin slices Whole Wheat Toast
- 1 Tbsp butter

Preparation steps

Rinse, trim and spin lettuce dry. Rinse, trim and cut scallions crosswise into rings. Wipe mushrooms clean with a paper towel and cut into slices. To make dressing, whisk together vinegar, salt and pepper to taste, and oil.

To make the croutons, cut bread slices into small cubes. In a pan, fry breadcrumbs in melted butter until golden-brown. Just before serving, toss together lettuce, mushrooms and scallions with salad dressing. Sprinkle with croutons.
