7 ozs Quinoa (cooked)
3 ½ ozs Almond flour
1 Tbsp Baking powder
1 pinch salt
4 ozs Blueberries
3 egg whites
3 ½ ozs lactose-free yoghurt (3,5 % fat)
1 Vanilla bean (or 1 tsp vanilla extract)
2 tsps Coconut oil

Preparation steps

1.

Mix quinoa, almond flour, baking powder, and salt in a large bowl.

2.

Wash blueberries. In another bowl mix egg whites and yogurt until creamy. Then add to the quinoa mixture and fold in the vanilla bean pulp and blueberries.

3.

Heat some coconut oil in a pan and add 2 tablespoons of quinoa batter per pancake. Fry over medium heat for 3 minutes, then turn and bake on the other side until golden brown. Continue until you have used up all the oil and dough.

4.

Greek yogurt and fresh berries go well with the low carb quinoa pancakes.
