- 1 head Broccoli
- 4 ¼ ozs Emmentaler cheese
- 1 ¾ ozs Parmesan
- 3 eggs
- 2 ¾ ozs ground almonds
- 2 Tbsps ground flaxseed
- 1 garlic clove
- 9 ozs chunky tomatoes (can)
- 2 Tbsps Tomato paste
- 1 tsp dried oregano
- 1 tsp dried thyme
- salt
- peppers
- 2 scoops Mozzarella (approx 4 oz)
- 10 ozs yellow Cherry tomatoes
- 2 handfuls Arugula

Preparation steps
Clean broccoli, wash, divide into florets and chop in a blitz chopper until crumbly. Finely grate both types of cheese and mix thoroughly in a bowl with broccoli, eggs, almonds and flax seeds.
Cover 2 baking sheets with baking paper and spread broccoli mixture in 4 circles (Ø 8-9 inches) on the baking sheets. Pre-bake in preheated oven at 180 °C / 350 ˚F convection oven for approx. 20 minutes.
Meanwhile, peel garlic and puree with chunky tomatoes, tomato paste, oregano, thyme, salt and pepper. Season tomato sauce to taste. Drain mozzarella well and dice.
Spread pre-baked bases with tomato sauce, sprinkle with mozzarella, return to oven and bake until golden brown, about 15 minutes.
Meanwhile, wash and halve the cherry tomatoes. Wash and sort the arugula, drain well and add to the low carb pizzas together with the cherry tomatoes and serve.
