2 handfuls lamb's lettuce
1 Endive
4 Goat cheese
2 Tbsps Pine nuts
1 Tbsp peppercorns
1 pomegranate
3 Tbsps apple cider vinegar
1 Tbsp lemon juice
3 Tbsps sunflower oil
1 Tbsp grapeseed oil
1 Tbsp honey
Sea salt

Preparation steps

1.

Rinse the lettuce and pick apart. Drain well.

Rinse the endive and pick into single sheets. Put on a plate with the lettuce leaves and goat cheese.

3.

Cut the pomegranate in half and remove the seeds. Remove all white interior skins.

4.

Mix together the apple cider vinegar, honey and lemon juice and incorporate the oils. Stir in the pomegranate seeds and pine nuts. Season with salt and peppercorns. Pour this vinaigrette over the leaves and goat cheese before serving.
