1 Tbsp clarified butter

Preparation steps

1.
Score a cross into the base of each sprout and cook in salt water for 10-15 minutes or until a skewer can be inserted into the centre of each one. Drain and quench with cold water.

Fry the bacon in the hot clarified butter for 2-3 minutes until golden brown. Add the sprouts and heat through for 1-2 minutes. Season with salt and nutmeg and serve.
