1 Preheat the slow cooker if necessary – see manufacturer’s instructions.
2 Trim the meat of any excess fat.
3 Layer the meat with the onions, carrots and potatoes in the slow cooker pot.
4 Mix the stock with the thyme, salt and a pinch of pepper and pour over the ingredients in the slow cooker pot.
5 Cover and cook on low for 5 hours or until the meat is very tender.
