8 baby Kohlrabi
4 Tbsps lemon juice
400 grams scooped balls of Vegetables (kohlrabi, carrots, zucchini)
Cauliflower (8 small)
Broccoli (8 small)
150 grams Yogurt (0.1% fat)
1 Tbsp Whipped cream
1 Tbsp lemon juice
salt
freshly ground peppers

Preparation steps

1.

Peel kohlrabi, remove inner flesh, being careful not to puncture outside walls. Cut a lid. Add lemon juice to boiling, salted water and cook kohlrabi until al dente. Drain and let cool.

Cook kohlrabi balls, carrot balls and cauliflower florets in boiling salted water for about 4 minutes until al dente. Add zucchini balls and broccoli florets and cook for an additional 5 minutes. Drain vegetables and rinse with cold water and drain and pat dry. Arrange vegetable balls and florets in hollowed kohlrabi nests.

Mix yogurt, cream and lemon juice and season with salt and pepper. Serve kohlrabi nests with sour cream.
