- 1 ⅓ cups Couscous
- 2 ½ cups low-sodium vegetable stock
- 3 cups baby Spinach (washed)
- 6 Medjool Date (pitted and sliced)
- ¾ cup Pomegranate seed
- ⅓ cup raisins
- 2 Tbsps Pistachio
- 1 lemon (juiced)
- salt
- freshly ground Black pepper

Preparation steps
1.
Place the couscous in a heatproof bowl. Add the stock, stir once, and cover the bowl tightly with clingfilm or a tight-fitting lid.
2.
Set the couscous to one side for 10 - 15 minutes until it has absorbed the stock. Fluff with a fork and stir in the spinach. Cover again and leave the spinach to wilt for 5 minutes.
3.
Stir in the remaining ingredients and season to taste with salt and pepper before serving.
