Grain Salad Bowl with Veggies

- ⅜ cup white wine
- 1 ⅔ cups vegetable stock
- 1 ½ cups Couscous (instant)
- 1 ⅔ cups Radish (left whole or halved, as desired)
- 4 scallions (cut into rings on the diagonal)
- 1 clove garlic cloves (finely chopped)
- 3 Tbsps olive oil
- 2 Tbsps lemon juice

Bring the white wine and stock to the boil. Pour over the couscous and leave to swell for around 5 minutes, then separate the grains with a fork.
In a bowl, mix together the couscous, radishes, spring onions, garlic and oil. Season to taste with lemon juice, salt and ground black pepper and serve.
