Ingredients

For servings

⅜ cupswhite wine
1 ⅔ cupsvegetable stock
1 ½ cupsCouscous instant
1 ⅔ cupsRadish left whole or halved, as desired
4scallions cut into rings on the diagonal
1 clovegarlic finely chopped
3 tablespoonsolive oil
2 tablespoonslemon juice

Directions

1 Bring the white wine and stock to the boil. Pour over the couscous and leave to swell for around 5 minutes, then separate the grains with a fork.
2 In a bowl, mix together the couscous, radishes, spring onions, garlic and oil. Season to taste with lemon juice, salt and ground black pepper and serve.
