cup white wine
1 ⅔ cups vegetable stock
1 ½ cups Couscous (instant)
1 ⅔ cups Radish (left whole or halved, as desired)
4 scallions (cut into rings on the diagonal)
1 clove garlic cloves (finely chopped)
3 tablespoons olive oil
2 tablespoons lemon juice

Preparation steps

Bring the white wine and stock to the boil. Pour over the couscous and leave to swell for around 5 minutes, then separate the grains with a fork.

In a bowl, mix together the couscous, radishes, spring onions, garlic and oil. Season to taste with lemon juice, salt and ground black pepper and serve.
