- 1 cup Quinoa (heaped)
- 4 Tbsps olive oil
- 4 Sweet potato (peeled and cubed)
- 1 head Broccoli (broken into florets)
- 1 handful baby Spinach
- 2 Limes (juice)
- 2 Tbsps extra virgin olive oil
- salt
- peppers
- To garnish
- 1 pomegranate (seeds)
- Sunflower seed
- Greek yogurt

Preparation steps
1.
Cook the quinoa according to the packet instructions. Drain, rinse and set aside.
2.
Heat the oil in a pan and gently cook the sweet potatoes, stirring from time to time, for about 8 minutes until tender.
3.
Cook the broccoli in a pan of boiling salted water until tender. Drain and refresh in cold water, then drain again.
4.
Fluff the quinoa gently with a fork and put into a bowl.
5.
Whisk together the lime juice, olive oil and a pinch of salt and add to the quinoa with the vegetables. Stir gently to combine. Season to taste with salt and pepper.
6.
Place on a serving plate and sprinkle with pomegranate and sunflower seeds. Drizzle with yoghurt.
