Preparation steps
Peel and thinly slice ginger root.
Rinse lemon in hot water, wipe dry and remove peel with a heavy-duty vegetable peeler. Juice lemon.
In a small pot, combine 2/3 cup water, 2/3 of the lemon peel, ginger, cloves, and cranberries. Bring to a boil. Reduce heat and simmer about 8 minutes.
Pour through a sieve into a second pot. Add lemon and cranberry juices and heat until warmed through. Pour into a mug or cup, add sweetener to taste and garnish with remaining lemon peel.
