1 Rinse arugula, spin dry and finely chop.
2 Rinse the basil and lemon balm and shake dry. Pluck off leaves, reserve some for garnish and finely chop the rest.
3 Squeeze juice from lemon half.
4 Trim fat from ham, then cut ham into very thin strips.
5 In a bowl, mix arugula, basil, lemon and cream cheese until smooth.
6 Stir in ham. Season the spread with lemon juice, salt and pepper. Garnish with basil and lemon balm leaves and serve.
