150 grams Pastry flour
1 pinch salt
250 milliliters milk
3 eggs
butter (for greasing the pan)
1 Tbsp chopped parsley
1 Tbsp chopped scallions
200 grams thinly sliced ham
8 slices Gruyere

Preparation steps

Whisk together the flour, salt, milk, eggs and chopped herbs until smooth. Cover and let stand for about 30 minutes. Heat a bit of butter in a non-stick pan and spoon in a small amount of the batter. Cook until golden brown on both sides, cover and place in an 80°C (approximately 175°F) oven to keep warm and repeat until you have 8 crepes. Cut the sliced ham into thin strips and heat in the pan with a bit of butter.

Top each crepe with several strips of ham and a slice of cheese. Fold into quarters and serve immediately.
