1 Preheat the oven to 350 degrees F.
2 Place the prunes, oats, baking soda and coconut oil in a bowl and add boiling water. Stir gently and set aside.
3 Meanwhile, in a larger bowl, whisk together the eggs and honey until well combined. Stir the flour and ground cinnamon and then finally the prune and oat mixture. Mix well and pur into a greased loaf pan.
4 Bake for 45 minutes until the knife inserted into the loaf comes out clean.
5 Cool out of the pan on a cooling rack before slicing.
