Besides valuable proteins, pumpkin seeds provide phytosterols. The bioactive substances can have a preventive effect on prostate problems and bladder problems or even alleviate them. The nuts in this recipe provide healthy fats and proteins and the oats provide energizing carbs and fiber.
You can also use other nuts and dried fruits for more variation or based on what you have available.

- For the granola
- 3 Tbsps butter
- 3 ½ cups coarse Oats
- ½ cup Shredded coconut
- ¼ cup Sunflower seed
- ½ Vanilla bean (seeds scraped out)
- 0.333 cup Cashews
- 3 Tbsps Pumpkin seed (peeled)
- 3 Tbsps honey
- ¼ cup raisins
- 3 Tbsps dried Cranberry
- Plus
- 1 ½ Tbsps soft butter
- 4 slices whole grain bread
- 4 hard-boiled eggs (sliced)
- 1 microgreen
- 2 ¾ cups natural Yogurt
Preparation steps

Heat the oven to its lowest temperature and line two baking tray with grease-proof paper.

Melt the butter in a pot and mix together the remaining granola ingredients, apart from the dried fruits, in a large bowl. Add the melted butter, mix well and spread the granola equally onto the baking trays.

Bake for around 35-40 minutes until golden brown, turning occasionally. Leave to cool and the stir in the dried fruits.

Spread the butter on the bread and place the sliced eggs on top. Garnish with cress and ground black pepper.
5.
Pour equal amounts of the yogurt into four muesli bowls and add the granola. Serve with the bread and a glass of tomato juice or multi-vitamin juice.
