- For the gnocchi
- 4 ⅔ cups floury potatoes
- ¼ cup Ricotta cheese
- 1 egg yolk
- ½ cup grated Parmesan
- ¾ cup flour
- Nutmeg (freshly grated)
- flour (for kneading)
- 1 cup cream (30% fat)
- 2 Tbsps Crème fraiche
- 2 Tbsps fresh, grated Parmesan
- 2 slices Prosciutto
- 12 Sage

Preparation steps

For the gnocchi boil the potatoes for about 30 minutes until they can be pierced easily with a knife.
2.
Remove the potatoes from the pot, peel and mash well. Mix quickly with the ricotta, egg yolk, Parmesan, flour, salt, pepper and nutmeg to form a dough, adding a little water if necessary.

Sprinkle the dough with flour and roll into long ropes. Cut into pieces of equal size, roll them gently and allow to rest on an floured work surface until all the gnocchi have been made.

Bring the cream, creme fraiche and Parmesan to a boil in a pan. Season to taste with salt and pepper.

Chop the ham into small pieces.

Cook the gnocchi in salted boiling water for 10 minutes. Remove the gnocchi with a slotted spoon and drain. Swirl them around in the hot sauce. Divide among plates or bowls. Sprinkle with the ham and pepper. Garnish with sage. Serve.
