1 clove garlic cloves
3 Tbsps olive oil
1 tsp honey
1 tsp balsamic vinegar
1 tsp sweet paprika
½ tsp Chili powder
4 Chicken breasts (approx. 140 g each)
1 shallot (finely diced)
2 handfuls mint (leaves picked)
1 unwaxed lemon (zest and juice)
1.333 cups Yogurt

Preparation steps

1.
Crush the garlic into the oil. Whisk together with the honey, balsamic, paprika, chilli and ground black pepper. Brush over the meat, cover and leave to marinate for around 15 minutes.

Mix together the shallot, mint and half the lemon juice. Stir the remaining lemon juice and the zest into the yoghurt and season to taste with salt and white pepper.

Remove the chicken from the marinade, allowing any excess to drip off, and grill on the hot barbecue for 3-4 minutes on each side. Season lightly with salt.
4.
Serve drizzled with yoghurt and garnished with the mint and shallot.
