- 53 ozs chicken (jointed)
- 1 tsp paprika
- ⅜ cup olive oil
- 4 onions (finely diced)
- 3 cloves garlic cloves (minced)
- 667 cups Bacon (diced)
- 2 red peppers (sliced)
- 1 green pepper (sliced)
- 1 yellow pepper (sliced)
- 4 Tomatoes (cored and diced)
- ⅜ cup white wine
- 1 Bouquet garni
- 2 sprigs parsley

Preparation steps

Season the chicken pieces with salt and pepper. Sprinkle them with paprika.

Heat the oil in a large pot. Fry the pieces of chicken. When they are nicely browned, take them out of the pot and replace them with the onions, garlic and chopped bacon. Cook for two minutes, stirring all the time then add the chicken back in.

Add the peppers and tomatoes. Cook for two minutes over a hot flame, stirring constantly. Season with salt and pepper.

Next, lower the heat and pour on the white wine. Cover and simmer for an hour over a very low heat.

Meanwhile, wash, dry and pluck the parsley and chop finely.

Arrange the chicken on four plates, surrounded by the vegetables and bacon. Sprinkle with parsley. Serve immediately.
