Ingredients

For the relish
1 small onion (peeled, grated)
1 chili pepper (seeds removed, finely chopped)
1 Cucumber (peeled, seeds removed, grated)
1 stick Celery (strings removed, very finely chopped)
¾ cup gherkins (finely chopped)
1 tsp fresh ginger (grated)
1 tsp Mustard seed
1 pinch Ground clove
cup apple cider vinegar
cup brown sugar
½ tsp peppers (ground)
1 tsp salt
For the hot dogs
4 Hot dog buns (e. g. with sesame seeds)
1 Tbsp vegetable oil
4 red Sausage
2 Tomatoes (cored, sliced)
1 Red onion (peeled, finely chopped)
0.333 cup green Olives (stuffed with red peppers, sliced)

Preparation steps

For the relish, place all the vegetables in a pan and bring to the boil with the ginger, mustard seeds and clove powder. Simmer over a low heat for 10 - 15 minutes, stirring frequently so the mixture does not stick to the pan.

Then add the vinegar and simmer uncovered, stirring occasionally, until the mixture has thickened to a jam-like consistency. Finally stir in the sugar, season the relish with salt and pepper, bring back to the boil and then let cool.

Toast the rolls. Heat the oil in a pan and fry the sausages, or cook them under the grill, for approx. 5 minutes, turning them over at least once.

Cut the rolls open lengthways, but do not cut right through. Fill them with some relish, sausages, onion, tomatoes and olives and serve at once.
