400 grams tan Lentils
1 bunch Soup vegetables (carrots and celery)
1 bay leaf
1 tsp dried thyme
1 ½ liters Beef broth
2 Tbsps finely chopped parsley
1 onion
1 Tbsp butter
2 tsps grated Lemon peel
1 Tbsp Tomato paste
3 Tbsps balsamic vinegar
salt
freshly ground pepper
sugar
2 Tomatoes
4 Hot dogs

Preparation steps

1.

Rinse carrots and celery. Peel carrots and dice carrots and celery. Rinse lentils in a colander with cold water. Boil lentils in broth and simmer for 20 min. Add vegetables, bay leaves and thyme and simmer for another 20 minutes. Peel and dice onion. Blanch tomatoes for a few seconds, remove skins, quarter, core and cut into small pieces.

Heat butter in a pan and sweat onion.

Add onion, lemon zest, tomatoes and tomato paste to lentils and boil. Season with balsamic vinegar, salt, pepper and a pinch of sugar. Slice hot dog and add to soup. Garnish with chopped parsley and serve.
