- 2 Tbsps lemon juice
- sugar
- 8 cups green Asparagus (trimmed)
- 8 baby Leeks (cut to the same length as the asparagus)
- 8 rashers Bacon
- 3 Tbsps sunflower oil
Preparation steps

Bring to the boil a pan of water with the lemon juice, 1 tsp sugar and 1 tsp salt. Boil the asparagus and leeks together for around 6 minutes. Drain, rinse in cold water and leave to drain thoroughly.

Make 8 bundles, each with 4-5 asparagus spears and one leek, and wrap each bundle in a rasher of bacon.
3.
Heat the oil in a pan and sear the bundles on all sides for approx. 5 minutes until the bacon is crispy, seasoning with salt and ground black pepper in the process.
4.
Arrange two bundles per plate and serve immediately.
