- 8 cups green Asparagus (lower third of the spears peeled)
- 1 shallot (finely chopped)
- 3 Tbsps butter
- 3 Tbsps flour
- ⅜ cup dry white wine
- ⅞ cup chicken stock
- ⅞ cup cream (at least 30% fat)
- 2 Tbsps Crème fraiche
- Nutmeg
- 12 Lasagne noodle
- 2 Tbsps fresh Parmesan (grated)
- 1.333 cups fresh Mozzarella (sliced)
Preparation steps

Heat the oven to 200°C (180°C in a fan oven), 400°F, gas 6.

Blanch the asparagus in boiling salted water for about 4 minutes. Drain well and refresh in cold water.

Fry the shallot in hot butter. Add the flour, mix well and quench with the wine. Reduce a little and add the stock and the cream. Simmer for 5 minutes until thick. Add the creme fraiche and season with salt, ground black pepper and nutmeg.

Pour some of the sauce into a baking dish (approx. 20 x 20 cm) and place a layer of lasagne sheets on top.

Add the asparagus, cover with some sauce and sprinkle some Parmesan on top. Cover with the remaining lasagne sheets, pour the remaining sauce on top and cover with the mozzarella. Bake for 15-20 minutes until golden brown.
