Preparation steps

Rinse the asparagus and cut the spears diagonally approximately in the middle. Use the lower halves otherwise. Cook the tips in salted water with the sugar for about 10 minutes to a slight bite. For the dressing, mix the lemon juice with the oil, season with salt and pepper. Strain the asparagus and drain. Place each spear on a wooden stick, place on a plate or dish and drizzle with the dressing. Let stand for 10 minutes. Before serving roll in the Parmesan then serve on small plates.
