½ Cucumber (thinly sliced)
4 scallions (sliced)
1 Tbsp chopped thyme
2 Tbsps olive oil
½ lemon (juice)

Preparation steps

Put the couscous into a large bowl and add the stock. Cover and leave to soak for 10 minutes.

Mix the vegetables and thyme with the olive oil and lemon juice, season to taste and mix well.

Fluff up the couscous with a fork, then add the vegetable mixture. Toss together and serve.
