This bowl is low in calories but packed with nutrients from the mix of vegetables.

If you don't have freekeh, you can substitute quinoa or bulgur.

Ingredients

For the freekeh
1 cup freekeh
2 cups water
For the vegetables
2 Tbsps olive oil
1 large Zucchini (seeded and chopped)
1 red pepper (diced)
1 yellow pepper (diced)
1 large Red onion (diced)
1 ½ cups white Asparagus (trimmed)
1 cup button Mushrooms (halved)
salt
freshly ground peppers

Preparation steps

For the freekeh: Place the freekeh in a dry saucepan and toast over a medium-moderate until fragrant; 2 - 3 minutes.

Add the water and a little salt, stir well, and bring to the boil. Once boiling, reduce the heat to low, cover, and cook for 20 - 25 minutes until the freekeh has absorbed all the water and is tender.

For the vegetables: Preheat the grill to hot. Toss the vegetables with the olive oil and seasoning.
4.
Once the freekeh is ready, remove it from the heat and set it to one side, covered, for 5 minutes.
5.
Grill the vegetables for 5 - 6 minutes until tender and lightly coloured, turning them as needed.
6.
Fluff the freekeh with a fork and toss with the grilled vegetables. Season to taste and serve in bowls.
