4 cups fresh Chanterelle
3 sprigs parsley (flat leaf)
2 Tbsps olive oil
salt
peppers (freshly ground)
8 slices Sandwich Bread
8 slices Processed Cheese

Preparation steps

1.
Clean the mushrooms. Chop into smaller pieces if necessary.
2.
Wash the parsley and remove the excess water by shaking. Remove the leaves. Coarsely chop.
3.
Heat the oil in a pan and saute the mushrooms for 3-5 minutes. Season with salt and pepper. Mix in the parsley and remove from heat.
4.
Place a slice of cheese on half of the bread slices. Divide the mushroom mixture among the slices. Place another slice of cheese on top. Finish off with the remaining bread slices.
5.
Press the sandwiches firmly together and place on a hot grill. Grill for 6-8 minutes turning occasionally. Slice the sandwiches in half diagonally and serve in paper sandwich bags.
