- 4 Chicken legs
- 2 garlic cloves
- 12 small potatoes (waxy)
- 1 untreated lemon
- 1 bunch thyme
- 2 onions
- 8 Tbsps vegetable oil
- 1 Tbsp sharp Mustard
- salt
- peppers (from the mill)
Preparation steps
Step 1
Rinse chicken, pat dry. Cut chicken apart at the joint between thigh and lower leg.
Step 2
Peel garlic and cut into thin slices. Slide half of garlic under skin of chicken legs.
Step 3
Rinse potatoes and quarter lengthwise. Peel onions and cut into strips.
Step 4
Put chicken legs on a baking sheet and rub with 2 tablespoons salt and pepper. Bake in preheated oven at 180°C (approximately 350°F) for about 15 minutes.
Step 5
Meanwhile in a bowl stir together residual oil and mustard. Squeeze half a lemon and mix juice with oil mixture.
Step 6
Pluck thyme and stir into oil mixture. Season heavily with salt and pepper.
Step 7
Cut and slice other lemon. Stir lemon slices, potatoes, onions and garlic into sauce.
Step 8
Add vegetable mixture to chicken legs after 15 minutes of baking. Bake until golden brown for another 40-45 minutes.
