- 1 fresh fresh chicken (each 1.5-1.7 kg)
- salt
- freshly ground peppers
- 3 Tbsps clarified butter
- 40 pcs large garlic cloves
- 1 sprig thyme
- 1 sprig rosemary
- 4 large potatoes
- 125 milliliters dry white wine

Preparation steps

Rinse chicken, pat dry and rub inside and out with salt and pepper,

Heat clarified butter in a roasting pan and fry chicken on all sides until golden brown. Add garlic, thyme and romemary to the roasting pan, cover and cook in a preheated 160°C (approximately 350°F) oven for 45 minutes. Occasionally baste with roasting juices.

Rinse potatoes, peel, quarter and add to the roasting pan. Sprinkle with wine and cook covered in the preheated oven for 30 minutes. Uncover and cook for another 15 minutes.
4.
Arrange chicken, potatoes and garlic on a serving dish, sprinkle with roasting juices and carve at the table.
5.
(At the table, press the soft flesh of garlic cloves and spread on a crispy baguette if desired.)
