4 Sea bream ready to cook ( 400 grams)

2 Tbsps Pastry flour
40 grams clarified butter (for cooking)
100 grams Wild garlic pesto
Lemon wedge (for serving)

Preparation steps

1.

Rinse sea breams well inside and out, pat dry. Season with salt and pepper and coat with flour. Heat butter in a large frying and cook fish for about 8 minutes per side or until golden brown. Baste with butter occasionally. Remove from the pan and drain on paper towels.

2.

Garnish with pesto and serve accompanied with lemon wedges and wild garlic.
