Avocados contain many healthy unsaturated fatty acids, which have a positive effect on our cardiovascular health. In addition, the fruits shine with lots of vitamin E. This protects our body cells from free radicals and strengthens our defenses. Plus point: Because the fried avocado slices are rich in healthy fats, the fat-soluble vitamin E can be optimally absorbed by our bodies.
The fried avocado slices are a great change from classic potato fries. They can either be served as a main course with a delicious dip, or as a side dish - how about with our vegan oatmeal burger?

- 3 Avocados
- 3 ½ ozs whole spelt flour
- peppers
- salt
- 1 egg
- 7 ozs whole grain breadcrumbs
- 1 Tbsp olive oil
- 1 parsley
Preparation steps
Cut avocados in half, remove seeds, peel halves and slice flesh. Whisk egg in a small bowl with a little salt and pepper.
Roll avocado slices first in spelt flour, then in egg and finally in wholemeal breadcrumbs. Heat olive oil in a frying pan and fry avocado slices on both sides until crispy.
If desired, finely chop some fresh parsley and garnish fried avocado slices with some parsley.
