Preparation steps
1.
Hollow out the centre of the potatoes to leave room for the stuffing. Discard the centre.

Steam the potatoes over simmering water until just tender to the point of a knife. Set aside.
3.
Meanwhile blanch the tomatoes in boiling water, then peel off the skins. Dice the flesh, discarding the seeds, and mix with the fromage frais, chopped basil and seasoning. Stir through the extra-virgin oil until emulsified.
4.
Use a spoon to stuff the hollowed-out potatoes and serve sprinkled with basil leaves.
